Bleeding occurs when they do a heavy attack (I.E., the right-click) and bleeding doesn't occur when they do a light attack (left-click). Sadly, there's just no benefit to equipping agility weapons on thralls EXCEPT for bows. Archery seems to be fine, just set the thralls to "Prioritize Ranged". The only good agility armor I've found is skelos master. Good temperature resistance for the cold. Although there is also abyssal armor which is decent resistance and definitely good for damage all round. The reinforced skelos set gives 40% agility weapon dmg and something for followers.
